A light refreshing sipper with honeyed notes, super aromatic with hints of dried flowers, juniper, hay, quince and orange rind. This wine pairs beautifully well with spiced slow cooked lamb, roast and caramelised veg, spicy seafood, chicken, nutty grains and hard and semi hard cheeses.     Grown on ancient vines and cultivated organically throughout their lifetime, this white is made of Cojon de Gato, an incredibly rare grape variety specific to the Alcardete locality in Toledo. Grown on scenic plots 800 metres above sea level, surrounded by luscious oaks and scrubland peppered with thyme and gorse, these grapes are handpicked at dawn during the second week of September and macerated for 2 weeks in concrete tanks. This is organic orange wine at its finest, not aged, unfined and unfiltered with no added sulphites.
